Get ready for your kitchen to smell aaaaamazing.
Fig leaves are, you guessed it, the leaves of a fig tree. I get mine from a local farm (Growing Family Farms in Spencerport, NY) and have access to them during the warmer months of the year. If you can get your hands on them, this is what I’d suggest you make first.

8-10 fig leaves.
1 quart of white sugar.
1 quart of water.

Bake your fig leaves at 200 degrees F for 10 minutes. The edges of the leaves will curl and crisp, but pull them before any browning occurs. See the photo above.
Combine your fig leaves, sugar and water in a pot over medium heat and bring to a simmer. Once the sugar has dissolved, cut the heat.
Let the mixture sit, unstrained, until completely cool. I reccommend leaving to cool on the counter for roughly an hour, then transferring to the fridge overnight.
Strain out the fig leaves and use in place of simple syrup in cocktails or coffee.
