pomegranate spoon salad

This is my go-to for a meal prep that actually gets eaten. Bright, tangy, and satiating. I hope you love! ᵕ̈

Chop, mix, enjoy. 

Ingredients

  • 2 tsp za’atar (I use store bought)

  • 14oz english cucumbers (1 pack, usually)

  • 8oz pomegranate seeds

  • 1 16oz can of chickpeas, drained and rinsed

  • 8 oz of low moisture mozzarella cheese (or paneer, or halloumi… drool)

  • 1 medium sized red onion

  • 1 lemon, for its juice

  • 1/4 cup olive oil

  • 1/8 cup of red wine vinegar

  • 3/4 tbsp kosher salt

  • Torn herbs such as parsley and mint.

  • Black pepper, to taste

  1. Dice cucumbers, cheese, onion.

  2. Combine all ingredients in a bowl.

  3. That’s literally it… <3
