pomegranate spoon salad
This is my go-to for a meal prep that actually gets eaten. Bright, tangy, and satiating. I hope you love! ᵕ̈
Ingredients
2 tsp za’atar (I use store bought)
14oz english cucumbers (1 pack, usually)
8oz pomegranate seeds
1 16oz can of chickpeas, drained and rinsed
8 oz of low moisture mozzarella cheese (or paneer, or halloumi… drool)
1 medium sized red onion
1 lemon, for its juice
1/4 cup olive oil
1/8 cup of red wine vinegar
3/4 tbsp kosher salt
Torn herbs such as parsley and mint.
Black pepper, to taste

Dice cucumbers, cheese, onion.
Combine all ingredients in a bowl.
